Recently, we have received several questions regarding the operation of a school garden. Attached are questions and answers provided by USDA to address this issue.
In this time of fiscal constraint, resulting from reduced state aid, increased costs and pending layoffs, I am surprised that schools are looking at new initiatives. While I support the concept of a school garden, as school food service directors/managers, you must ensure that you are preparing and serving more healthy and wholesome food items and that your meals always meet meal pattern requirements. It is essential that you operate cost effectively and self-sustaining, if possible, as general fund revenues may not be available to cover your costs.
